This will slow down their respiratory process, without stopping it completely. In other words, the aging process of the plant will be delayed. Restricting the respiratory process of the lemon completely will have opposite effect and this will cause the lemon to age much quicker. So, you should not freeze them.

Keeping your lemons in the fridge is ideal since they this place is cool and away from light. This will preserve the nutrients in lemons from the both elements that can destroy them.
