Creamy broccoli soup recipe

Ingredients:

  • 2 tbsp. organic coconut oil
  • 1 medium-sized onion, chopped
  • 2 medium-sized celery stalks, chopped
  • 2 medium-sized potatoes, peeled and cubed
  • 4 cups broccoli (preserve the florets aside after you steam the vegetable)
  • 2 ½ cups chicken broth
  • 1 cup unsweetened almond milk
  • 2 tsp. turmeric
  • Salt and black pepper

Preparation:

  1. Put the oil in a large pot, and cook on medium heat. Sauté the celery and onion for 4 minutes or until soft.
  2. Add in your potatoes and broccoli stems. Cook this for two more minutes.
  3. Pour in chicken broth and almond milk. Let the mixture boil, and add in the spices.
  4. Turn the heat on low, cover the pot, and simmer the soup for 20 minutes.
  5. Once your veggies are tender, transfer the mixture into a blender, and process until smooth.
  6. Serve the soup, and garnish your soup with feta cheese and broccoli buds. In this way you’ll get tons of sulforaphane.
