Nitrates and nitrites are the most harmful additives used in hot dogs. Organic hot dogs may sometimes contain these additives in higher amounts than the regular hot dogs. Basically, when these two substances come into contact with amines on high temperature, they result in nitrosamines. And the nitrosamines can cause bladder, colon, pancreas and stomach cancer.

One hot dog a day may increase the chances of colorectal cancer by 21%, is stated by the American Institute for Cancer Research.
